Banana Cream Pie

Grandma Neet's Recipe, but Uncle Warren makes them every Thanksgiving.

1/3 cup sifted flour
2/3 cup sugar
1/4 tsp salt
2 cups milk
3 egg yolks, beaten
2 Tbsp butter
1/2 tsp vanilla
1/2 cup whipping cream

pie crust

1. Mix together 1/3 cup sifted flour, 2/3 cup sugar and 1/4 tsp salt

2. Scald 2 cups milk (put on heat, steamy/don't boil) Gradually add hot milk to flour mixture, stirring constantly until thickens and boils. Cook for 2 minutes more, stirring constantly

3. Add 3 slightly beaten egg yolks (put a small amount of hot milk and flour mixture into the egg yolks and stir, then add that to the big pot, as to warm the eggs and not cook them)

4. Take off heat and add 2 Tbsp butter and 1/2 tsp vanilla. Cover with saran wrap and let cool. 

5. Beat 1/2 cup cream, sweetened with a little vanilla and sugar and add to pudding. Beat together.

Slice 3 bananas on bottom of cooked pie crust. Cover with pudding and chill for a couple of hours.
