Vegetarian Tacos (Anna & Quinton)

2 tsp olive oil
2 cups frozen corn kernels
1 large zucchini, diced
1 1/2 cups grape tomatoes, quartered
1/3 cup chopped red onion
1/4 cup fresh cilantro
2 Tb lime juice
1/2 tsp salt
refried black beans, fat free
corn tortillas or baked tostada shells
Monterey Jack cheese, shredded or quest fresco, crumbled
avocado diced
** I add red bell peppers as well

In a large skillet add olive oil, corn and zucchini and sauce over medium high heat for 3-5 minutes. Transfer to a large bowl.

Add tomatoes, red onion, cilantro, lime juice and salt. Mix until blended. Set aside.

On one corn tortilla, spread 2 Tb of refried black beans. Srinkle 1 Tb cheese and microwave for 30 seconds. Remove from microwave. Top the taco with 1/2 of the vegetable mixture.

Each taco is 198 calories (minus the avocado) 231 with 2 slices of avocado
