Buttermilk Pancakes - Lydia Ellis

2 cups buttermilk
2 eggs

Beat eggs and buttermilk together with hand risk until well mixed.

Combine the following dry ingredients.

1 cup flour
2 T sugar
pinch of salt
1/8 tsp baking soda

Stir dry ingredients into milk and eggs. Cook on 400° griddle coated with light layer of crisco shortening. Turn as soon as the bubbles on the pancakes begin to pop.
