Keeps in fridge for 3 months or seal. Makes 2 cups
12 eggs
4 cups sugar
2 cups fresh lemon juice
1 cup butter, melted
4 T grated lemon peel
In the top of a double broiler, beat eggs and sugar. Stir in lemon juice and butter. Cook over simmering water for 15 minutes or until thickened. Strain to remove any egg residue. Add lemon peel, continue cooking till thick.
