Mexican Chicken & Rice Dish (Amy Hall)

Tomatoes
butter
red onion
red bell pepper
white rice
chicken
lemon pepper

Saute chopped up tomato, 1 cube butter, red onion for a long time. Then puree.
Cook chicken in lemon pepper, shred.
Cook up some white rice and add the red bell pepper, chicken and tomato puree. Bake.
