We had these at the Davis reunion at the cabin and they were soooo good!
Layer on plate in this order:
Shredded iceberg lettuce
Meat mixture (recipe below)
Shredded Cheese
Homemade Salsa (recipe below) or Costco's Rojo's Pico de Gallo
Guacamole made with avocados, fresh lime juice and salt or Costco's Wholly Guacamole
Sour cream
Fresh cilantro leaves, chopped
Serve with:
Lime flavored tortilla chips or tortilla chips of your choicer
Tostada Meat Mixture:
2 lbs ground beef, browned in skillet, fat drained off.
Add:
Mexican Seasoning (Schilling) to taste or taco seasoning
1 can black beans, undrained
1 can S&W Mexican stewed tomatoes, undrained
1 can (7 oz) diced green chilies
pepper to taste
Homemade Salsa:
1 can S&W Mexican stewed tomatoes, undrained (chop a bit with a spoon)
equal amount of diced fresh tomatoes
1 garlic clove pressed
fresh lime juice (maybe 1 lime)
diced white onion (I use about 1/4 onion)
chopped fresh cilantro
Salsa is best made a day ahead and refrigerated. Drain to serve
You may add fresh cooked (& chilled) corn, sliced olives, etc. if desired.
