Blender Salsa - Jodi Chatham

 28 oz organic diced tomatoes

1/2 orange pepper

1/2 purple onion

1-2 jalapenos, seeded

1 bunch cilantro, discard stems

1/4 cup frozen pineapple

1 Tbsp garlic, minced

1/2 tsp ground cumin

1 Tbsp salt

3 Tbsp fresh lime juice

1 tsp red wine vinegar


Pulse above ingredients in a blender to your desired consistency. Don't over blend, you want it to be slightly chunky!
