Seasoning for chicken thighs:
salt
pepper
smoked paprika
onion powder
garlic powder
Italian seasoning
Preheat the oven to 375
Season the chicken with the blend above.
5-6 chicken thighs bone in
1 Tbsp olive oil
1/2 cup sun-dried tomatoes (whole or chopped)
3/4 cup chicken broth
1/2 cup heavy cream
1/4 cup parmesan cheese
4 garlic cloeces minced
1 tsp dried oregano
1/2 tsp red pepper flakes
Heat the olive oil in a large cast iron skillet then sear the chicken thighs for 5 minutes per side.
Set aside then lower the heat to medium add in the garlic, oregano, and red pepper flakes and sear until fragrant. Stir in the chicken broth, heavy cream, sun-dried tomates and parmesan cheese. Bring sauce to a simmer, taste the sauce and adjust to taste then add back in the chicken thighs skin side up.
Transfer skillet to the oven and cook for 15-20 minutes until checken reaches 165 degrees internal temperature
