Preheat oven to 300. Line two large cookie sheets with parchment paper.
In large
bowl combine the following:
8 cup
regular rolled oats
2 cup flaked coconut
3 handfuls almonds, chopped coarsely
3 handfuls pecans, chopped coarsely
¼ cup cocoa powder
1 Tbsp cinnamon
In small
saucepan combine the following:
1 cup
coconut oil
¾ cup sugar
½ cup maple syrup
Bring just
to a boil stirring constantly. Remove from heat and add:
1 Tbsp
vanilla
1 tsp coconut flavor
Pour over
dry ingredients and mix well. Divide mixture equally onto the two cookie sheets
and spread out evenly. Sprinkle one handful of tiny semi-sweet choc chips over
each pan and place in preheated oven. Cook 15 minutes then rotate pans. Cook 10
more minutes then sprinkle a handful of large flaked coconut over each pan.
Cook 8 more minutes. Remove from oven and cool completely. Break up granola
into chunks and store in tightly sealed containers.
Tilese's Notes: You definitely don't have to follow it exactly. The flaked coconut I add at the end is large flaked coconut, I just get it off Amazon. The brand is Food to Live. But you don't have to put the chocolate chips or the flaked coconut and it's still good.
