Mac & Cheese Casserole

 16 oz elbow macaroni

1/4 tsp salt

2 T olive oil

1 lb Colby longhorn cheese (can use sharp or extra sharp cheddar)

2 eggs, whipped with some milk

1.5 C nonfat milk

1/2 stick butter

1.5 T garlic powder

1 tsp onion powder 

2 tsp paprika (also sprinkle on top)


Preheat oven to 350. Spray 9x13 glass dish with PAM. Bring 2qts water, salt and oil to boil. Add macaroni and bring to a second boil. Cook 4 min. (oven will finish the cooking process)

Quickly rinse with cold water, then rinse in hot water (to melt the butter).

Add to macaroni, butter, seasonings, whipped eggs, cheese and milk. Pour into baking dish. Sprinkle paprika and bread crumbs evenly across top. Bake 45 min-1 hour or until top is browned.
