2.5lb boneless beef chuck pot roast
1 T olive oil
2 cloves garlic, minced
freshly ground pepper
1 medium onion, sliced
1 green bell pepper, sliced
8oz whole mushrooms
28oz spaghetti sauce
16oz spaghetti, uncooked
Fresh parmesan cheese, grated
Preheat oven to 350. Trim excess fat from roast. Heat oil in frying pan over medium heat. Add garlic and stir until tender. Add roast and brown all sides.
Place roast in baking dish, sprinkle with pepper. Arrange onion, bell peppers and mushrooms over roast. Top with spaghetti sauce.
Cover and bake 2.5 hours or until roast is tender.
Meanwhile, cook spaghetti, place on serving platter. Cover to keep warm. Cut roast into thin slices and place on top of spaghetti. Spoon spaghetti sauce over roast. Grate parmesan cheese over sauce.
