Chocolate Chunk Cookies

I make these every year at Christmas, they are rich and sweet and sour and I love them. One year I made the dough and wrapped it in waxed paper logs and froze to give to friends and neighbors.

1 1/2 cups flour
1 tsp baking soda
1 cup butter
3/4 cup brown sugar
3/4 cup sugar
1 large egg
1 tsp vanilla
1 1/2 cups oats
1 cup dried cherries
1 1/2 oz bittersweet chocolate, coarsely chopped
1 cup toffee pieces

1. Preheat oven to 350°. Line 2 baking sheets with parchment paper. Sift dry ingredients

2. Cream butter and sugars on medium speed using cookie paddle attachment until light and fluffy (2-3 minutes) scraping sides. Add egg, mix on high to combine. Add vanilla.

3. Add flour mixture and mix on low speed until well combined. Add oats, cherries, chocolate and toffee, mix after each addition.

4. Spoon a heaping tablespoon of dough onto lined baking sheet 2 inches apart.

5. Bake until golden brown, 14-16 minutes, rotating baking sheet halfway through. Transfer to wire rack to cool.
