Hamburger Enchiladas - Caroline

Filling:
1 1/2 lb ground beef
1/2 cup chopped onion, or 1/2 Tbsp onion powder
1 tsp chili powder
1 lb cheddar cheese, grated

Sauce:
1 cube butter
1/3 cup flour
3 tsp chili powder
2 cups hot water
8 oz can tomato sauce

1. Filling: brown meat with onion and chili powder. Add salt to taste.

2. Sauce: Melt butter and stir in flour until all lumps are gone. Stir in chili powder and hot water. Continue to stir. When it has thickened to consistency of tomato sauce, add the tomato sauce and stir. Remove from heat.

3. Assembly: Spread one side of tortilla with 1 Tbsp sauce. Put approximately 1/3 cup hamburger in a line across the middle of tortilla and a small amount of cheese across the hamburger. Roll tortilla loosely so it doesn't crack. Place in the pan so enchiladas touch but are not crowded. Pour remaining sauce over enchiladas and sprinkle with remaining cheese.

4. Bake at 350° for 25-30 minutes or until bubbly
