Mikita's Minnestroni Soup

1 lb ground beef
2 large carrots
2 cloves garlic
1 small onion
2 stalks celery
2 - 14 oz cans diced tomatoes
1 - 15 oz can kidney beans
1 - 15 oz can great northern (or white) beans
1 - 15 oz can tomato sauce
1 - 12 oz can V8 juice
1 1/2 tsp salt
1 tsp basil
1/2 tsp thyme
1 tsp oregano
1/2 tsp pepper
1 Tbsp white vinegar
1/2 cup mini pasta shells, cooked

Brown beef and drain. Add chopped onion, carrot, celery and garlic. Sauce about 10 minutes. Add everything else except pasta. Simmer 1 hour or cook all day in crockpot on low. Add pasta and heat through and serve.
