Taco Soup - Tina

Cook until just tender in boiling water. Drain

2 - 4 medium potatoes, peeled and diced (usually more)
3 - 4 carrots peeled and diced
1 onion, chopped

Add:

1 pkg frozen peas
1 can tomatoes
18 oz can tomato sauce
 1 pkg taco seasoning
1 can corn, drained (or use frozen corn)
1 can green beans, drained
1 can kidney beans, undrained

Brown 1 lb hamburger, drain grease and add to veggie mixture last.

Heat thoroughly. Serve topped with corn chips, cheese and sour cream.


Or for a simpler variety, here is Stef's recipe:

1 lb ground beef
1/2 cup chopped onion
3 cups water
2 - 26 oz cans diced tomatoes, undrained
1 - 16 oz can kidney beans, undrained
2 Tbsp taco seasoning

Top with avocado, grated cheddar, tortilla chips & sour cream.
