Thanksgiving Stuffing (Savory Sausage Stuffing)

Fast, easy stovetop recipe came from Nob Hill's magazine.

5-6 oz light turkey sausage
1 small onion, coarsely chopped
1 Tbsp butter
6 cups bread cubes or 4 cups grated crumbs
1 cup chopped celery
1/4 cup freshly chopped parsley or 1 Tbsp dried
1 tsp. dried tarragon leaves or thyme
1/4 tsp salt (optional)
1/2 tsp paprika
1/8 tsp nutmeg
2 cups low sodium chicken broth
1 cup roasted chestnuts, coarsely chopped (optional)

Cook sausage meat over medium heat until nicely browned and cooked throughout. In large non-stick skillet, melt butter and saute onion until halfway done. Add celery. After a few more minutes, add sausage and seasonings and stir. Add bread and chicken broth and stir well to evenly coat bread. Reduce heat to simmer and continue to slowly cook for about 5 to 10 minutes.

Makes 8 servings.
