Broccoli Cheese Soup - Mom

2 Tbsp finely chopped onion

3 Tbsp flour

2 cup milk

2 chicken bouillon Cubes

1 bay leaf

2 Tbsp butter

1/8 tsp pepper (or to taste)

5 slices American cheese

1 1/2 cup water

1 small head chopped broccoli


In large saucepan, cook onion til tender in butter. Stir in flour and pepper until well blended and add milk all at once. Cook until sauce the kens and add the cheese. Stir until melted and remove from heat. In another saucepan, dissolve bouillon cubes in water: add bay leaf and bring to a boil. Add broccoli and cook for about three minutes or so. Do not drain! Add to cheese mixture: stir until well blended. Remove bay leaf. Great the next day too. Makes about 5 one cup servings.

(Can add a little grated cheddar, some died fresh tomatoes, diced green onion, and cilantro on top for garnish)
