8 oz spaghetti, broken in pieces
5 Tbsp butter
6 Tbsp flour
3 cups chicken or turkey broth
1 cup light cream
1 tsp salt
Pepper
1 cup fresh or canned mushrooms, including juice
5 Tbsp minced green peppers
3 cups cooked turkey, cubes
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
Cook spaghetti in boiling, salted water until just tender (do not overcook). Melt butter; blend in four. Stir broth into flour mixture. Add cream. Cook until mixture thickens and bubbles. Add salt and pepper, drained spaghetti, mushrooms, green peppers, and cooked turkey. Turn into 9x13 pan. Sprinkle with cheeses. Bake at 350° for about 30 minutes or until bubbly and lightly browned. Makes 8 servings.
