Meatballs - Tammy

Basic Oven Meatballs

3 eggs

1/2 cup milk

3 cup soft bread crumbs

1/2 cup finely chopped onions

2 tsp salt

3 lbs ground beef 

In large mixing bowl, mix ingredients above. Chill. Shape into 72 one inch balls. Bake in 375° oven for 25-30 minutes. Cool. Freeze. Separate into bags.


Hawaiian Meatballs

Make paste:

2 Tbsp cornstarch

1/2 cup chicken broth

2 T soy sauce

In separate saucepan: 

2 Tbsp butter, melt

Add 1 cup chicken broth

3/4 - 1 cup diced green peppers

6 slices diced canned pineapple

Simmer 5 minutes.

Add 

cornstarch paste

1/2 cup vinegar

3/4 cup pineapple juice

1/2 cup sugar

1/2 tsp salt

1/4 tsp ginger

Simmer, stirring constantly til thickens.


Spicy Meatball Sandwiches

1 clove garlic, crushed

1 T butter

1/2 cup catsup

1/3 cup chili sauce

2 T brown sugar

1 T Worcestershire sauce

1 T prepared mustard

1 tsp celery seed

1/4 tsp salt

Few drops bottled hot pepper sauce

3 thin lemon slices

24 frozen meatballs

6 hard rolls, or buns toasted

1 onion, sliced into rings

In medium saucepan, cook garlic in butter for 4-5 minutes. Stir in catsup, chili sauce, brown sugar, worchestershire, mustard, celery seed, salt, pepper sauce and lemon. Bring to boiling. Add meatballs. Cover and cook over medium heat 20 minutes, stirring occasionally. Remove lemon. Serve meatballs on rolls. Top with onion slices. Makes 6 sandwiches.
