3/4 c. margarine
1 1/2 c. sugar
3 eggs
1 1/4 c. flour
1/4 tsp. salt
1/4 tsp. soda
3/4 c. buttermilk
grated rind of 1/2 lemon
Cream margarine and sugar. Add eggs one at a time. Add buttermilk and lemon rind. Stir together dry ingredients and bake at 350 for 1 hour.
Glaze:
Juice of 1 lemon
1/2 c. powdered sugar
Stir and let dissolve. When bread is done, remove from pan and poke holes in top. Spoon glaze over top.
