12 eggs
1 pkg fresh shredded hash brown potatoes (not frozen), usually found with the eggs in the store
1/2 cup butter
1/2 cup flour
1 tsp baking powder
1/4 tsp salt
8 oz diced green chili peppers
1 pint small curd cottage cheese
1 lb grated cheddar cheese
Optional Ingredients
diced onions
diced ham or shredded chicken
steamed broccoli cooked half the time in the microwave, then added to the rest of ingredients and finishes cooking in the oven
Melt butter in 9x13 pyrex
Mix all other ingredients together (add juice from chili peppers, too)
Pour mixture into pan and stir into the melted butter (some will float on top)
Bake one hour at 350
