Cinnamon Rolls - Sonya Peterson

2 Tbsp yeast
1/2 cup warm water
1 cube butter
2 cups milk
2 eggs
3/4 cup sugar
1 Tbsp salt
7 cups flour

• Sprinkle 2 Tbsp yeast over 1/2 cup warm water
• In sauce pan, melt 1 cube butter, add 2 cups milk; warm
• In mixing bowl, mix 2 eggs, 3/4 cup sugar, and 1 Tbsp salt
• Add melted butter and warm milk to mixture in bowl; stir
• Making certain milk is not too warm, add yeast mixture to mixture in bowl
• Add 7 cups flour and mix gently. Don't over mix as dough will get tough
• Allow to rise in warm place until double in size. Gently stir down and let rise a second time
• Do not mix down, but pour onto a floured surface and roll into rectangle
• Spread with melted butter and sprinkle with cinnamon sugar
• Roll into jelly roll and cut in 1 inch slices
• Spread melted butter and sprinkle brown sugar on bottom of pan and place rolls close together
• Allow to rise until double
• Bake at 350° for 18-20 minutes
• Spread with frosting immediately

Butter Cream Frosting

3 1/2 - 4 cups powdered sugar
1/3 cup butter
1/4 cup evaporated milk
1 tsp vanilla

• Cream together and spread on warm rolls
